Ingredients
- Butternut squash: 2 cups, roasted and pureed
- All-purpose flour: 2 cups
- Brown sugar: 1 cup, packed
- Eggs: 3 large
- Baking powder: 1 teaspoon
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 1/2 teaspoon
- Vanilla extract: 1 teaspoon
- Maple syrup: 1/2 cup (for glaze)
- Powdered sugar: 1 cup (for glaze)
- Salt: 1/2 teaspoon
- Olive oil or vegetable oil: 1/2 cup
Instructions
- Preheat your oven to 400°F (200°C) and prepare the butternut squash.
- Lower the oven temperature to 350°F (175°C) and grease and flour your baking pan.
- Mix the dry ingredients in a medium bowl.
- In a large mixing bowl, beat the brown sugar and oil, then add eggs and vanilla, followed by the squash puree.
- Combine the wet and dry mixtures until just combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes.
- Prepare the maple glaze while the cake cools.
- Once the cake is cool, drizzle the glaze over the top.
