Instructions

  1. Prepare the butternut squash by cutting it in half, scooping out the seeds, and roasting it cut-side down at 350°F (175°C) for 30-40 minutes until tender. Cool and puree.
  2. In a large mixing bowl, combine the butternut squash puree, brown sugar, maple syrup, eggs, and vanilla extract. Whisk until smooth.
  3. In another bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.
