Instructions
- Prepare the butternut squash by cutting it in half, scooping out the seeds, and roasting it cut-side down at 350°F (175°C) for 30-40 minutes until tender. Cool and puree.
- In a large mixing bowl, combine the butternut squash puree, brown sugar, maple syrup, eggs, and vanilla extract. Whisk until smooth.
- In another bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the chopped walnuts.
- Pour the batter into a prepared baking pan and bake at 350°F (175°C) for 25-30 minutes until golden brown and a toothpick comes out clean. Cool before serving.
