Description
A delightful cake that combines the sweetness of roasted apples with the earthy flavor of sage, perfect for autumn gatherings.
Ingredients
- All-purpose flour: 2 cups (240 grams)
- Granulated sugar: 1 cup (200 grams)
- Baking powder: 2 teaspoons
- Salt: 1/2 teaspoon
- Unsalted butter: 1/2 cup (113 grams), softened
- Eggs: 2 large
- Fresh sage: 1/4 cup, finely chopped
- Roasted apples: 2 cups, diced (about 2 medium apples)
- Ground cinnamon: 1 teaspoon
For the sage-infused glaze:
- Powdered sugar: 1 cup (120 grams)
- Milk: 2 tablespoons
- Fresh sage: 1 tablespoon, finely chopped
Instructions
- Preheat your oven to 400°F (200°C) and prepare the apples by coring and dicing them. Roast for about 20 minutes until tender.
- Lower the oven temperature to 350°F (175°C). In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, and cinnamon.
- Cream the softened butter in another bowl until smooth, then add eggs one at a time, mixing well. Stir in the chopped sage.
- Gradually combine the dry ingredients with the wet mixture, mixing until just combined. Gently fold in the roasted apple chunks.
- Pour the batter into a prepared cake pan and bake for 30-35 minutes. Check for doneness with a toothpick.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Drizzle with sage-infused glaze before serving.
