- 500g (4 1/2 cups) rhubarb, cut into 4cm (1.5″) pieces
- 1/3 cup white sugar
- 3 Granny Smith apples (~600g or 1.2lb whole), peeled and cut into 1.5cm (3/5″) cubes
- Zest of 1 orange (optional but recommended)
- 1 cup rolled oats (not quick or steel cut)
- 1 cup plain/all-purpose flour
- 3/4 cup (tightly packed) brown sugar
- 1/2 tsp baking powder
- 1/2 tsp cinnamon powder
- 90g (6 tbsp) unsalted butter, melted
- Pinch of salt
- Vanilla ice cream or custard (for serving)
Instructions
- Preheat oven to 200°C (375°F) (180°C fan).
- Prepare the rhubarb and apple filling: In a large bowl, toss rhubarb, apples, white sugar, and orange zest. Spread evenly in a 30x20cm (12×8″) baking dish.
- Prepare the crumble topping: In a bowl, combine rolled oats, flour, brown sugar, baking powder, and cinnamon. Add melted butter and stir until the mixture resembles coarse crumbs.
- Scrunch the crumble mixture into clumps with your hands, then scatter over the fruit filling in the baking dish.
- Bake for 35 minutes, or until the topping is golden brown and the fruit filling is bubbling.
- Remove from the oven, rest for 5 minutes. Serve with vanilla ice cream or custard.
Notes
- Frozen rhubarb can be used if fresh rhubarb is unavailable. Add extra cornstarch to thicken the filling if needed.
- If using sweeter apples, consider reducing the sugar slightly in the filling.
- For a crunchier topping, increase the amount of rolled oats or add chopped nuts like almonds or pecans.
