  • White potatoes: 2 medium-sized
  • Blue potatoes: 2 medium-sized
  • Olive oil: 3 tablespoons
  • Sea salt: to taste
  • Fresh herbs: 2 tablespoons, finely chopped (such as rosemary, thyme, or parsley)

Instructions

  1. Select firm potatoes without blemishes.
  2. Wash the potatoes under cold running water and scrub away dirt.
  3. Slice the potatoes into thin rounds, about 1/8 inch thick.
  4. Soak the potato slices in cold water for about 30 minutes (optional).
  5. Season the potato slices with olive oil and sea salt in a mixing bowl.
