  • 2/3 cup granulated sugar, divided
  • 1 and 1/2 tablespoons Platinum Yeast (approximately 2 standard-sized packets)
  • 1/2 cup unsalted butter, softened to room temperature
  • 2 large eggs, at room temperature
  • 1/2 teaspoon pure vanilla extract or vanilla bean paste
  • 1/2 teaspoon salt
  • 4 and 1/2 cups all-purpose flour or bread flour
  • 2 teaspoons canola oil, vegetable oil, or olive oil for greasing
  • 1 (10 oz) package frozen raspberries, do not thaw
  • 1/3 cup granulated sugar for filling
  • 1 teaspoon cornstarch
  • 4 ounces full-fat brick cream cheese, softened to room temperature
  • 1 cup confectioners’ sugar
  • 1 tablespoon whole milk or heavy cream
  • 1/2 teaspoon pure vanilla extract or vanilla bean paste for icing

Instructions

  1. Prepare the dough: Mix warm milk, sugar, and yeast. Let sit for 5 minutes. Add remaining sugar, butter, eggs, vanilla, and salt. Gradually add flour, knead until dough is formed.
  2. Let the dough rise: Transfer dough to a greased bowl, cover, and let rise for 2 hours.
  3. Prepare the filling: Toss frozen raspberries with sugar and cornstarch.
  4. Assemble the rolls: Punch dough down, roll into a rectangle, spread raspberry mixture, roll into a log, slice, and place in a greased baking dish.
  5. Bake the rolls: Preheat oven to 350°F (177°C), bake for 28 to 32 minutes until golden brown.
  6. Prepare the icing: Mix cream cheese, confectioners’ sugar, milk, and vanilla until smooth. Spread over warm rolls.

Notes

Allow ample time for dough rising for a fluffy texture. Adjust sweetness based on preference.
