Instructions

  1. Make raspberry filling: In a pot, combine fresh raspberries, cold water, cornstarch, and 3/4 cup granulated sugar. Cook over medium-high heat, stirring until thickened, about 3-4 minutes. Cool completely.
  2. Prepare graham cracker crust: Mix crushed graham crackers, kosher salt, 2 tablespoons sugar, and melted butter. Press into a 13×9 inch dish and refrigerate for 15 minutes.
  3. Make cream cheese layer: Beat softened cream cheese with confectioners sugar until smooth. Add 1 1/2 cups heavy cream and beat until light and fluffy. Spread evenly over crust.
