  • 1 large egg, beaten with 1 tbsp water (for egg wash)
  • 2 cups heavy cream
  • 1 cup vanilla cake mix
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 1/2 cups cold milk

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt. Cut in butter until the mixture resembles coarse crumbs.
  2. Add ice water gradually until dough holds together. Fold in 3 tablespoons of sprinkles.
  3. Shape dough into a disc, wrap in plastic, and chill for at least 1 hour.
  4. Preheat oven to 425°F (220°C). Roll dough to 1/4-inch thickness and fit into pie dish. Crimp edges.
  5. Brush with egg wash and bake for 12 minutes. Remove pie weights and bake for an additional 5 minutes until golden. Cool completely.
  6. In a stand mixer, whip heavy cream until soft peaks form. Add vanilla cake mix and beat until stiff peaks form.
  7. In a separate bowl, whisk pudding mix with cold milk until thickened.
  8. Fold pudding and remaining sprinkles into whipped cream mixture.
  9. Spoon filling into cooled crust and spread evenly. Top with more sprinkles.
  10. Refrigerate for at least 5 hours until set before serving.
