Ingredients
- Quinoa: 1 cup (uncooked)
- Sweet potatoes: 2 medium, peeled and diced
- Red bell pepper: 1 medium, diced
- Red onion: 1 small, finely chopped
- Fresh spinach: 2 cups, roughly chopped
- Olive oil: 3 tablespoons (for roasting and dressing)
- Lemon juice: 2 tablespoons (freshly squeezed)

Instructions
- Rinse the quinoa under cold water to remove bitterness. In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes. Fluff with a fork after letting it sit covered for 5 minutes.
- Preheat the oven to 425°F (220°C). Toss the diced sweet potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway through.
- In a large mixing bowl, combine the chopped spinach, diced red bell pepper, and finely chopped red onion. Add the roasted sweet potatoes and cooked quinoa.
- In a small bowl, whisk together the remaining tablespoon of olive oil and freshly squeezed lemon juice for the dressing.
- Pour the dressing over the salad mixture and toss gently to combine. Adjust seasoning with additional salt and pepper if needed. Serve warm, at room temperature, or chilled.
