Ingredients

  • Quinoa: 1 cup (uncooked)
  • Sweet potatoes: 2 medium, peeled and diced
  • Red bell pepper: 1 medium, diced
  • Red onion: 1 small, finely chopped
  • Fresh spinach: 2 cups, roughly chopped
  • Olive oil: 3 tablespoons (for roasting and dressing)
  • Lemon juice: 2 tablespoons (freshly squeezed)
  • Salt: 1 teaspoon (or to taste)
  • Pepper: 1/2 teaspoon (or to taste)

Instructions

  1. Rinse the quinoa under cold water to remove bitterness. In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes. Fluff with a fork after letting it sit covered for 5 minutes.
  2. Preheat the oven to 425°F (220°C). Toss the diced sweet potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway through.
  3. In a large mixing bowl, combine the chopped spinach, diced red bell pepper, and finely chopped red onion. Add the roasted sweet potatoes and cooked quinoa.
  4. In a small bowl, whisk together the remaining tablespoon of olive oil and freshly squeezed lemon juice for the dressing.
  5. Pour the dressing over the salad mixture and toss gently to combine. Adjust seasoning with additional salt and pepper if needed. Serve warm, at room temperature, or chilled.
