Ingredients
- All-purpose flour: 2 cups (240 grams)
- Pumpkin puree: 1 cup (240 grams)
- Brown sugar: 3/4 cup (150 grams), packed
- Eggs: 2 large
- Baking powder: 2 teaspoons
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 1/2 teaspoon
- Butter: 1/2 cup (115 grams), melted
- Milk: 1/2 cup (120 ml)
- Salt: 1/2 teaspoon
For the streusel topping:
- All-purpose flour: 1/2 cup (60 grams)
- Brown sugar: 1/4 cup (50 grams), packed
- Ground cinnamon: 1/2 teaspoon
- Butter: 2 tablespoons (30 grams), cold and cubed
Instructions
- Preheat your oven to 350°F (175°C) and prepare your muffin tin.
- In a large bowl, whisk together the dry ingredients.
- In another bowl, mix the wet ingredients until smooth and creamy.
- Prepare the streusel topping by mixing the ingredients until crumbly.
- Combine the wet and dry ingredients gently and fill the muffin tins.
- Sprinkle the streusel topping over each muffin and bake for 18-22 minutes.
- Cool the muffins in the tin for 5 minutes, then transfer to a wire rack.
