Ingredients
- Unsalted butter: 1 cup (226 grams)
- Brown sugar: 1 cup (packed, 220 grams)
- Granulated sugar: 1/2 cup (100 grams)
- Eggs: 2 large
- Vanilla extract: 2 teaspoons
- All-purpose flour: 2 cups (240 grams)
- Pumpkin puree: 1 cup (240 grams)
- Pumpkin spice: 1 tablespoon
- White chocolate chips: 1 cup (170 grams)
- Salt: 1/2 teaspoon
- Powdered sugar: for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×13 inch (23×33 cm) baking pan by greasing it or lining it with parchment paper.
- In a separate bowl, whisk together the all-purpose flour, pumpkin spice, and salt.
- In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and pumpkin puree.
- Gradually add the dry mixture to the wet ingredients and stir gently until just combined.
- Fold in the white chocolate chips until evenly distributed.
- Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Let the blondies cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired before cutting into squares.
Notes
- Choose 100% pure pumpkin puree for the best flavor.
- Store leftovers in an airtight container at room temperature for up to three days, or refrigerate for longer storage.
- For gluten-free blondies, substitute all-purpose flour with a gluten-free flour blend.
- For vegan blondies, replace eggs with a flaxseed or chia seed mixture and use plant-based butter.
