Ingredients

  • Rolled oats: 2 cups (about 180 g)
  • Pumpkin puree: 1 cup (about 240 g)
  • Honey: 1/2 cup (about 170 g)
  • Almond butter: 1/2 cup (about 128 g)
  • Pumpkin spice: 2 teaspoons
  • Chopped nuts: 1/2 cup (about 60 g)
  • Dried cranberries: 1/2 cup (about 70 g)
  • Salt: 1/4 teaspoon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch (20×20 cm) baking dish with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, pumpkin spice, chopped nuts, dried cranberries, and salt.
  3. In another bowl, mix the pumpkin puree, honey, and almond butter until smooth.
  4. Pour the wet mixture into the dry ingredients and mix until well combined.
  5. Transfer the mixture into the prepared baking dish and press down firmly.
  6. Bake for 25-30 minutes until the edges are golden brown.
  7. Let cool for 10 minutes, then lift out and cool completely before cutting into bars.

  • Store in an airtight container for up to a week at room temperature or two weeks in the fridge.
  • For longer storage, wrap individually and freeze for up to three months.
