Ingredients
- Rolled oats: 2 cups (about 180 g)
- Pumpkin puree: 1 cup (about 240 g)
- Honey: 1/2 cup (about 170 g)
- Almond butter: 1/2 cup (about 128 g)
- Pumpkin spice: 2 teaspoons
- Chopped nuts: 1/2 cup (about 60 g)
- Dried cranberries: 1/2 cup (about 70 g)
- Salt: 1/4 teaspoon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch (20×20 cm) baking dish with parchment paper.
- In a large mixing bowl, combine the rolled oats, pumpkin spice, chopped nuts, dried cranberries, and salt.
- In another bowl, mix the pumpkin puree, honey, and almond butter until smooth.
- Pour the wet mixture into the dry ingredients and mix until well combined.
- Transfer the mixture into the prepared baking dish and press down firmly.
- Bake for 25-30 minutes until the edges are golden brown.
- Let cool for 10 minutes, then lift out and cool completely before cutting into bars.
Notes
- Store in an airtight container for up to a week at room temperature or two weeks in the fridge.
- For longer storage, wrap individually and freeze for up to three months.
- Feel free to customize with different nuts or seeds.
