- 1 teaspoon vanilla extract
- Mini chocolate chips (for eyes)
Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a large bowl, mix the wet ingredients: pumpkin puree, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth. Gradually add the dry mixture to the wet one, stirring gently until just combined.
- Fill cupcake liners two-thirds full with the batter and bake for 18-20 minutes. Check for doneness with a toothpick.
- Let the cupcakes cool for about 5 minutes in the pan, then transfer to a wire rack to cool completely.
- Prepare the meringue frosting by beating egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form. Mix in vanilla extract.
- Once cupcakes are cool, pipe the meringue frosting onto each cupcake to create a ghostly swirl. Use mini chocolate chips for eyes.
