  • 1 teaspoon vanilla extract
  • Mini chocolate chips (for eyes)

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  2. In a large bowl, mix the wet ingredients: pumpkin puree, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth. Gradually add the dry mixture to the wet one, stirring gently until just combined.
  3. Fill cupcake liners two-thirds full with the batter and bake for 18-20 minutes. Check for doneness with a toothpick.
  4. Let the cupcakes cool for about 5 minutes in the pan, then transfer to a wire rack to cool completely.
  5. Prepare the meringue frosting by beating egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form. Mix in vanilla extract.
  6. Once cupcakes are cool, pipe the meringue frosting onto each cupcake to create a ghostly swirl. Use mini chocolate chips for eyes.
