- 4 cups powdered sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- Orange and yellow food coloring
- Edible glitter
- Candy eyeballs (for decoration)
Instructions
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add pumpkin puree, eggs, and vanilla extract; mix until well combined.
- In a separate bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- Gradually add the dry mixture to the wet ingredients, alternating with buttermilk, mixing until just combined.
- Divide the batter between two prepared cake pans and bake at 350°F for 25-30 minutes.
- Allow cakes to cool in pans for 10 minutes before transferring to wire racks to cool completely.
- For the frosting, beat softened butter until creamy, then gradually add powdered sugar, mixing on low speed.
- Add heavy cream and vanilla extract; beat on high speed until light and fluffy.
- Divide frosting and tint one half orange and the other half yellow.
- Assemble the cake by layering the cooled cakes with frosting in between, then apply a crumb coat and chill for 30 minutes.
- Pour chocolate ganache over the top of the cake, allowing it to drip down the sides.
- Decorate with piped frosting, candy eyeballs, and edible glitter.
