  • 1 cup heavy cream
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Orange and yellow food coloring
  • Edible glitter
  • Candy eyeballs (for decoration)

Instructions

  1. Cream together the softened butter and granulated sugar until light and fluffy.
  2. Add pumpkin puree, eggs, and vanilla extract; mix until well combined.
  3. In a separate bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry mixture to the wet ingredients, alternating with buttermilk, mixing until just combined.
  5. Divide the batter between two prepared cake pans and bake at 350°F for 25-30 minutes.
  6. Allow cakes to cool in pans for 10 minutes before transferring to wire racks to cool completely.
  7. For the frosting, beat softened butter until creamy, then gradually add powdered sugar, mixing on low speed.
  8. Add heavy cream and vanilla extract; beat on high speed until light and fluffy.
  9. Divide frosting and tint one half orange and the other half yellow.
  10. Assemble the cake by layering the cooled cakes with frosting in between, then apply a crumb coat and chill for 30 minutes.
