- 1/2 cup Brown sugar
- 1/4 cup Granulated sugar
- 1/2 cup Unsweetened applesauce
- 1 tsp Vanilla extract

- 1/2 tsp Ginger
- 1/4 tsp Cloves
- 1/4 tsp Salt
- 1 1/2 cups Graham cracker crumbs
- 1/2 cup Pecans, finely chopped
- 1 cup Dark chocolate chips
- 1 tbsp Coconut oil (optional)
Instructions
- Gather all your ingredients and tools.
- In a large mixing bowl, combine pumpkin puree, brown sugar, granulated sugar, and unsweetened applesauce. Add vanilla extract, spices, and salt, and mix well.
- Gradually stir in graham cracker crumbs and chopped pecans until the mixture is thick and moldable.
- Line an 8×8 inch baking dish with parchment paper and press the mixture evenly into the bottom. Refrigerate for at least one hour.
- After setting, lift the bars out using the parchment paper and cut into rectangular bars. Dip each bar into melted chocolate, let excess drip off, and place on a lined baking sheet. Sprinkle crushed pecans on top.
- Refrigerate again for about 30 minutes until the chocolate is set.
