- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup (60 g) chopped pecans (optional)
- 2 tablespoons granulated sugar (for cinnamon sugar topping)
- 1 teaspoon ground cinnamon (for cinnamon sugar topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×5-inch (23×13 cm) loaf pan by greasing it or lining it with parchment paper.
- In a bowl, whisk together the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
- In a large mixing bowl, combine the wet ingredients: pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Whisk until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in chopped pecans if using.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the cinnamon sugar mixture over the batter.
- Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before slicing.
