  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup (60 g) chopped pecans (optional)
  • 2 tablespoons granulated sugar (for cinnamon sugar topping)
  • 1 teaspoon ground cinnamon (for cinnamon sugar topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch (23×13 cm) loaf pan by greasing it or lining it with parchment paper.
  3. In a bowl, whisk together the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
  4. In a large mixing bowl, combine the wet ingredients: pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Whisk until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in chopped pecans if using.
  6. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the cinnamon sugar mixture over the batter.
  7. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before slicing.
