- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ cup unsalted butter, softened
- 1 large egg yolk
- ¼ teaspoon salt
- 1 cup pumpkin puree
- ½ cup granulated sugar
- ½ cup packed brown sugar
- ½ teaspoon cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ½ teaspoon vanilla extract
- 2 large eggs
- ¾ cup evaporated milk
Instructions
- Preheat oven to 350°F (175°C). Combine flour, granulated sugar, and salt for the crust. Add softened butter and egg yolk. Mix until crumbly. Press into a greased 9×13 inch pan. Bake for 15 minutes, then cool slightly.
- In a mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, cinnamon, ginger, nutmeg, cloves, and vanilla extract. Add eggs and whisk to combine. Stir in evaporated milk until smooth.
- Pour pumpkin filling over cooled crust. Spread evenly with a spatula.
- Bake for 25-30 minutes or until the filling is set in the middle. Let cool to room temperature, then refrigerate for 2 hours before slicing.
Notes
- Let the crust cool slightly before adding the filling to avoid the layers blending.
- Use pure pumpkin puree for the best flavor.
- Refrigerate the bars for at least 2 hours to help the filling set properly.
