For the cream cheese frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In a large mixing bowl, combine the wet ingredients: granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract. Beat until smooth.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
- Fold in the chopped pecans, reserving some for garnish if desired.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes, checking for doneness with a toothpick.
- Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
