Ingredients

  • 1 cup pumpkin puree
  • 2 cups fresh spinach
  • 1 cup mushrooms
  • 1 small onion
  • 2 cloves garlic
  • 1/2 cup feta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prep the vegetables: wash and chop spinach, slice mushrooms, chop onion, and mince garlic.
  2. In a skillet, heat olive oil and sauté onion until translucent, then add garlic and mushrooms, cooking until tender.
  3. Stir in chopped spinach and cook until wilted, seasoning with salt and pepper.
  4. In a bowl, whisk together eggs and pumpkin puree, seasoning with salt and pepper.
  5. Pour the egg mixture over the vegetables in the skillet and cook on the stovetop for 5 minutes.
  6. Sprinkle feta cheese on top and transfer the skillet to a preheated oven, baking for 15-20 minutes until set and golden.
