Description

Pumpkin Hand Pies are a cozy fall treat made with flaky pie crust and a creamy spiced pumpkin filling, topped with a sweet maple glaze. Perfect for dessert, snacks, or festive gatherings.

  • All Butter Pie Dough or Homemade Pie Dough
  • 1 large egg (beaten with 1 Tablespoon milk for the egg wash)
  • 1 and 1/4 cups pumpkin puree
  • 1 large egg
  • 6 Tablespoons packed light or dark brown sugar
  • 1 Tablespoon all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • 1 cup confectioners’ sugar
  • 3 Tablespoons pure maple syrup
  • 1 Tablespoon milk
  • 1/2 teaspoon maple or vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the pie dough and chill for at least 2 hours.
  2. Roll out dough to 1/8–1/4 inch thick and cut into 5-inch circles. Chill again for 15 minutes.
  3. Make the filling by whisking together pumpkin puree, egg, brown sugar, flour, pumpkin pie spice, vanilla extract, and salt until smooth.
  4. Add about 1 tablespoon of filling to one half of each dough circle. Fold over and seal the edges with a fork.
  5. Preheat oven to 400°F (204°C). Place hand pies on a baking sheet lined with parchment paper.
  6. Brush tops with egg wash and cut small slits in each for steam to escape.
  7. Bake for 22–25 minutes until golden brown. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. Prepare icing by mixing confectioners’ sugar, maple syrup, milk, extract, and salt until thick and pourable.
  9. Drizzle or dip cooled pies in icing.
  10. Serve warm or at room temperature and enjoy!

  • Do not overfill pies to avoid leaking.
  • Ensure dough is well-chilled for best texture and easier handling.
  • Cut vents in the top to let steam escape and prevent soggy crust.
  • Filling can be made a day ahead and stored in the fridge.
