Description

A delightful dessert that combines the rich flavors of pumpkin with the creamy texture of crème brûlée, perfect for fall gatherings.

Ingredients

Scale
  • 1 pre-made tart shell (9-inch, sweet pastry)
  • 1 cup pumpkin puree (canned or homemade)
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for caramelizing the top)

Instructions

  1. Prepare the tart crust by thawing the pre-made shell or rolling out your own dough to fit a 9-inch tart pan. Pre-bake at 350°F (175°C) for 10-12 minutes until lightly golden.
  2. In a medium saucepan, combine heavy cream, pumpkin puree, granulated sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt. Heat over medium until warm.
  3. Whisk egg yolks in a separate bowl until pale. Gradually add the warm pumpkin mixture to the yolks, whisking continuously.
  4. Pour the pumpkin filling into the pre-baked tart shell and smooth the top. Place on a baking sheet.
  5. Bake at 350°F (175°C) for 30-35 minutes until the filling is set but slightly jiggly in the center. Cool to room temperature, then refrigerate for at least 2 hours.
  6. Sprinkle an even layer of granulated sugar over the top and caramelize using a kitchen torch or under the broiler until golden and crackled.
  7. Allow the caramelized topping to cool and harden before slicing and serving.

Notes

  • Overbaking can lead to a dry filling; it should be set but slightly jiggly.
  • Always temper the egg yolks to avoid scrambling.
  • Ensure homemade pumpkin puree is well-drained to avoid excess moisture.
  • Allow the tart to cool completely before refrigerating for best results.
