Instructions
- Prepare the tart crust by thawing the pre-made shell or rolling out your own dough to fit a 9-inch tart pan. Pre-bake at 350°F (175°C) for 10-12 minutes until lightly golden.
- In a medium saucepan, combine heavy cream, pumpkin puree, granulated sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt. Heat over medium until warm.
- Whisk egg yolks in a separate bowl until pale. Gradually add the warm pumpkin mixture to the yolks, whisking continuously.
- Pour the pumpkin filling into the pre-baked tart shell and smooth the top. Place on a baking sheet.
- Bake at 350°F (175°C) for 30-35 minutes until the filling is set but slightly jiggly in the center. Cool to room temperature, then refrigerate for at least 2 hours.
- Sprinkle an even layer of granulated sugar over the top and caramelize using a kitchen torch or under the broiler until golden and crackled.
- Allow the caramelized topping to cool and harden before slicing and serving.
