- 1 cup heavy cream (240 ml)
- 1 cup whole milk (240 ml)
- 4 large egg yolks
- 1/2 cup granulated sugar (100 g)
- 1/2 cup pumpkin puree (120 g)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium saucepan, combine heavy cream and whole milk, heating until just about to simmer.
- In a mixing bowl, whisk together egg yolks and granulated sugar until pale and slightly thickened.
- Gradually pour the hot cream into the egg yolk mixture while continuously whisking.
- Stir in pumpkin puree, vanilla extract, ground cinnamon, ground nutmeg, and salt.
- Pour the custard mixture into six shallow ramekins, filling them about three-quarters full.
- Place the ramekins in a baking dish and create a water bath by filling the dish with hot water halfway up the sides of the ramekins.
- Bake for 30-35 minutes until set but slightly jiggly in the center.
- Allow the ramekins to cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Before serving, sprinkle a thin layer of granulated sugar on top and caramelize using a kitchen torch or broiler.

- Use high-quality ingredients for the best results.
- Fresh pumpkin puree can enhance flavor, but canned pumpkin works well too.
- Strain the mixture through a fine-mesh sieve for a silky smooth custard.
