Ingredients

  • 1 cup whole milk (240 ml)
  • 4 large egg yolks
  • 1/2 cup granulated sugar (100 g)
  • 1/2 cup pumpkin puree (120 g)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium saucepan, combine heavy cream and whole milk, heating until just about to simmer.
  3. In a mixing bowl, whisk together egg yolks and granulated sugar until pale and slightly thickened.
  4. Gradually pour the hot cream into the egg yolk mixture while continuously whisking.
  5. Stir in pumpkin puree, vanilla extract, ground cinnamon, ground nutmeg, and salt.
  6. Pour the custard mixture into six shallow ramekins, filling them about three-quarters full.
  7. Place the ramekins in a baking dish and create a water bath by filling the dish with hot water halfway up the sides of the ramekins.
  8. Bake for 30-35 minutes until set but slightly jiggly in the center.
  9. Allow the ramekins to cool to room temperature, then refrigerate for at least 4 hours or overnight.
  10. Before serving, sprinkle a thin layer of granulated sugar on top and caramelize using a kitchen torch or broiler.
