Description

Ingredients

  • 1/2 cup granulated sugar

  • 1/3 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice (or cinnamon, nutmeg, ginger mix)
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line muffin tin with paper liners.
  2. In a large bowl, whisk flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, mix granulated sugar, brown sugar, and oil. Add eggs and pumpkin puree; stir until smooth.
  4. Fold wet ingredients into dry ingredients gently; do not overmix.
  5. Fold in chocolate chips.
  6. Divide batter evenly among muffin cups, filling two-thirds full.
  7. Bake 18-20 minutes or until a toothpick inserted comes out clean.
  8. Cool muffins in pan 5 minutes, then transfer to wire rack to cool completely.
