- 1 can (15 oz) of chickpeas, drained and rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color you prefer)
- 1 can (14.5 oz) of diced tomatoes
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for about 5 minutes until soft and translucent.
- Add minced garlic and diced bell pepper, cooking for an additional 2-3 minutes.
- Stir in pumpkin puree, drained chickpeas, and diced tomatoes. Pour in vegetable broth and mix well.
- Sprinkle in chili powder, cumin, cinnamon, salt, and pepper. Stir to combine.
- Bring to a gentle boil, then reduce heat to low and cover. Let simmer for 20-25 minutes, stirring occasionally.
- Adjust seasoning if needed, adding more chili powder or coconut milk for creaminess if desired. Serve hot, garnished with fresh cilantro or parsley.
