- 1 ½ cups graham cracker crumbs
- ½ cup unsweetened cocoa powder
- ½ cup sugar

- ½ teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 2 large eggs
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch pan. In a medium bowl, combine graham cracker crumbs, cocoa powder, sugar, and melted butter. Press into the bottom of the pan. Bake for 10 minutes, then cool slightly.
- In a large bowl, beat softened cream cheese until smooth. Add sugar, pumpkin puree, vanilla extract, cinnamon, and nutmeg. Mix until combined. Add eggs one at a time, mixing well after each addition.
- Pour the pumpkin cheesecake filling over the cooled crust, spreading evenly. Tap the pan gently to release air bubbles.
- Bake for 30-35 minutes until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door open, and let the bars cool inside for 1 hour. Then, let them cool completely at room temperature and refrigerate for at least 2 hours.
