  • ½ cup brown sugar, packed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • Whipped cream (for serving)
  • Ground cinnamon (for dusting)
  • Chopped pecans (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, ground cinnamon, and salt until crumbly.
  3. Press the crumb mixture into a 9×13-inch baking dish and bake for about 10 minutes.
  4. In a large mixing bowl, beat softened cream cheese until smooth, then add pumpkin puree, granulated sugar, brown sugar, eggs, vanilla extract, ground cinnamon, nutmeg, ginger, and salt. Mix until smooth.
  5. Pour the pumpkin cheesecake filling over the cooled crust and spread evenly.
  6. Bake for 30-35 minutes until the filling is set and edges are slightly puffed.
  7. Let the bars cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
  8. Cut into squares and serve topped with whipped cream, ground cinnamon, and optional chopped pecans.
