- ½ cup brown sugar, packed
- 3 large eggs

- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon salt
- Whipped cream (for serving)
- Ground cinnamon (for dusting)
- Chopped pecans (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, ground cinnamon, and salt until crumbly.
- Press the crumb mixture into a 9×13-inch baking dish and bake for about 10 minutes.
- In a large mixing bowl, beat softened cream cheese until smooth, then add pumpkin puree, granulated sugar, brown sugar, eggs, vanilla extract, ground cinnamon, nutmeg, ginger, and salt. Mix until smooth.
- Pour the pumpkin cheesecake filling over the cooled crust and spread evenly.
- Bake for 30-35 minutes until the filling is set and edges are slightly puffed.
- Let the bars cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
- Cut into squares and serve topped with whipped cream, ground cinnamon, and optional chopped pecans.
Notes
- Use 100% pure pumpkin puree, not pumpkin pie filling.
- For gluten-free, substitute graham cracker crumbs with gluten-free alternatives.
- Chilling the bars helps them set and makes cutting easier.
