Ingredients

- Chai tea bags – 2-3 bags (depending on desired strength)
- Water – 1 cup (240 ml) for brewing
- Cream cheese – 8 oz (225 g), softened
- Unsalted butter – ½ cup (115 g), softened
- Powdered sugar – 3 cups (360 g)
- Ground cinnamon – 1 teaspoon
- Ground ginger – ½ teaspoon
- Vanilla extract – 1 teaspoon
- Milk – 1-2 tablespoons (as needed for consistency)
- Pumpkin seeds – ¼ cup (optional)
- Ground cinnamon or chai spice mix – for dusting
Instructions
- Prepare the chai tea infusion by brewing 2-3 chai tea bags in 1 cup of boiling water for 5-7 minutes. Let it cool.
- Mix the dry ingredients in a large bowl: flour, sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
- In a separate bowl, combine the wet ingredients: pumpkin puree, eggs, vegetable oil, cooled chai tea, and vanilla extract. Whisk until smooth.
- Gradually add the wet mixture to the dry ingredients and stir gently until just combined.
- Preheat the oven to 350°F (175°C). Divide the batter between two prepared 9-inch round cake pans and bake for 25-30 minutes.
- While the cakes cool, prepare the frosting by beating cream cheese and butter until smooth, then gradually add powdered sugar, cinnamon, ginger, and vanilla extract.
- Assemble the cake by placing one layer on a serving plate, frosting the top, and then adding the second layer. Frost the top and sides of the cake.
