Ingredients

  • All-purpose flour: 2 cups (240 g)
  • Pumpkin puree: 1 cup (240 g)
  • Brown butter: 1/2 cup (115 g), cooled
  • Granulated sugar: 1/2 cup (100 g)
  • Brown sugar: 1/2 cup (100 g), packed
  • Baking soda: 1 teaspoon
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: 1/2 teaspoon
  • Salt: 1/2 teaspoon
  • Vanilla extract: 1 teaspoon

Instructions

  1. Brown the butter in a saucepan over medium heat until golden brown and nutty.
  2. In a large bowl, mix the cooled brown butter with granulated sugar and brown sugar until smooth. Add pumpkin puree and vanilla extract, and stir until combined.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until combined.
