Ingredients

- Pumpkin puree: 1 cup (240 g)
- Brown butter: 1/2 cup (115 g), cooled
- Granulated sugar: 1/2 cup (100 g)
- Brown sugar: 1/2 cup (100 g), packed
- Baking soda: 1 teaspoon
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 1/2 teaspoon
- Salt: 1/2 teaspoon
- Vanilla extract: 1 teaspoon
Instructions
- Brown the butter in a saucepan over medium heat until golden brown and nutty.
- In a large bowl, mix the cooled brown butter with granulated sugar and brown sugar until smooth. Add pumpkin puree and vanilla extract, and stir until combined.
- In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until combined.
- Drop rounded balls of dough onto a baking sheet, spaced about 2 inches apart.
- Preheat the oven to 350°F (175°C) and bake for 12-15 minutes until edges are golden and centers are set.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
