Ingredients
- Lasagna noodles: 12 sheets
- Pumpkin puree: 1 cup (canned or homemade)
- Fresh spinach: 2 cups, chopped
- Ricotta cheese: 1 cup
- Mozzarella cheese: 2 cups, shredded (divided)
- Parmesan cheese: 1/2 cup, grated (plus extra for garnish)
- Garlic: 2 cloves, minced
- Nutmeg: 1/4 teaspoon
- Olive oil: 1 tablespoon
- Marinara sauce: 2 cups
- Salt and pepper: to taste
Instructions
- Prepare the lasagna noodles by boiling them in salted water until al dente, then drain and lay flat on a towel.
- Make the pumpkin spinach filling by mixing pumpkin puree, chopped spinach, ricotta cheese, half of the mozzarella, minced garlic, nutmeg, salt, and pepper in a bowl.
- Assemble the roll-ups by spreading marinara sauce in a baking dish, filling each noodle with the pumpkin mixture, rolling them up, and placing them seam-side down in the dish.
- Pour remaining marinara sauce over the roll-ups and sprinkle with remaining mozzarella and Parmesan cheese.
- Bake covered with foil at 375°F (190°C) for 25 minutes, then uncover and bake for an additional 15-20 minutes until cheese is bubbly and golden brown.
