Ingredients

  • Lasagna noodles: 12 sheets
  • Pumpkin puree: 1 cup (canned or homemade)
  • Fresh spinach: 2 cups, chopped
  • Ricotta cheese: 1 cup
  • Mozzarella cheese: 2 cups, shredded (divided)
  • Parmesan cheese: 1/2 cup, grated (plus extra for garnish)
  • Garlic: 2 cloves, minced
  • Nutmeg: 1/4 teaspoon
  • Olive oil: 1 tablespoon
  • Marinara sauce: 2 cups
  • Salt and pepper: to taste

Instructions

  1. Prepare the lasagna noodles by boiling them in salted water until al dente, then drain and lay flat on a towel.
  2. Make the pumpkin spinach filling by mixing pumpkin puree, chopped spinach, ricotta cheese, half of the mozzarella, minced garlic, nutmeg, salt, and pepper in a bowl.
