Description

Pumpkin Chocolate Swirl Blondies are a delightful dessert that combines the rich flavors of pumpkin and chocolate, offering a perfect balance of sweetness and spice.

Ingredients

  • Pumpkin puree: 1 cup (about 240 grams)
  • All-purpose flour: 1 ½ cups (about 190 grams)
  • Brown sugar: 1 cup (packed, about 220 grams)
  • Eggs: 2 large
  • Unsalted butter: ½ cup (1 stick, melted, about 113 grams)
  • Vanilla extract: 1 teaspoon
  • Baking powder: 1 teaspoon
  • Chocolate chips: 1 cup (about 170 grams)
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: ½ teaspoon
  • Salt: ¼ teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8 inch (20×20 cm) baking pan by greasing it and lining it with parchment paper.
  3. In a large mixing bowl, combine melted butter and brown sugar until smooth. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract and pumpkin puree.
  4. In a separate bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry mixture to the pumpkin mixture, stirring gently until just combined. Melt the chocolate chips and mix into half of the batter.
  6. Layer the batters in the prepared pan, swirling them together with a knife or skewer. Bake for 25-30 minutes until a toothpick comes out with a few moist crumbs.
  7. Cool in the pan for 10 minutes, then lift out using parchment paper and cool completely on a wire rack before slicing.

Notes

  • Use 100% pure pumpkin puree, not pumpkin pie filling.
  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
  • For a vegan version, replace eggs with flax eggs or applesauce and use plant-based butter.
