Description
Pumpkin Chocolate Swirl Blondies are a delightful dessert that combines the rich flavors of pumpkin and chocolate, offering a perfect balance of sweetness and spice.
Ingredients
- Pumpkin puree: 1 cup (about 240 grams)
- All-purpose flour: 1 ½ cups (about 190 grams)
- Brown sugar: 1 cup (packed, about 220 grams)
- Eggs: 2 large
- Unsalted butter: ½ cup (1 stick, melted, about 113 grams)
- Vanilla extract: 1 teaspoon
- Baking powder: 1 teaspoon
- Chocolate chips: 1 cup (about 170 grams)
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: ½ teaspoon
- Salt: ¼ teaspoon
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare an 8×8 inch (20×20 cm) baking pan by greasing it and lining it with parchment paper.
- In a large mixing bowl, combine melted butter and brown sugar until smooth. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract and pumpkin puree.
- In a separate bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry mixture to the pumpkin mixture, stirring gently until just combined. Melt the chocolate chips and mix into half of the batter.
- Layer the batters in the prepared pan, swirling them together with a knife or skewer. Bake for 25-30 minutes until a toothpick comes out with a few moist crumbs.
- Cool in the pan for 10 minutes, then lift out using parchment paper and cool completely on a wire rack before slicing.
Notes
- Use 100% pure pumpkin puree, not pumpkin pie filling.
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
- For a vegan version, replace eggs with flax eggs or applesauce and use plant-based butter.
