  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) coconut milk
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 inch piece of fresh ginger, grated
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 2 cups fresh spinach, roughly chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Prepare all ingredients: peel and dice the pumpkin, rinse and drain the chickpeas, dice the onion, mince the garlic, and grate the ginger.
  2. In a large pot, heat olive oil over medium heat and sauté the diced onion for about 5 minutes until translucent.
  3. Add minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add diced pumpkin to the pot and stir well, cooking for about 5 minutes.
  5. Incorporate the drained chickpeas into the pot.
  6. Pour in the coconut milk and vegetable broth, stirring to combine, and bring to a gentle boil.
  7. Reduce heat to low, cover, and let simmer for 20-25 minutes until the pumpkin is tender.
  8. Stir in chopped spinach and cook for an additional 5 minutes, then season with salt and pepper to taste.
  9. Serve in bowls, garnished with fresh cilantro if desired.
