- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) coconut milk
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 inch piece of fresh ginger, grated
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 2 cups fresh spinach, roughly chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro (optional, for garnish)
Instructions
- Prepare all ingredients: peel and dice the pumpkin, rinse and drain the chickpeas, dice the onion, mince the garlic, and grate the ginger.
- In a large pot, heat olive oil over medium heat and sauté the diced onion for about 5 minutes until translucent.
- Add minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add diced pumpkin to the pot and stir well, cooking for about 5 minutes.
- Incorporate the drained chickpeas into the pot.
- Pour in the coconut milk and vegetable broth, stirring to combine, and bring to a gentle boil.
- Reduce heat to low, cover, and let simmer for 20-25 minutes until the pumpkin is tender.
- Stir in chopped spinach and cook for an additional 5 minutes, then season with salt and pepper to taste.
- Serve in bowls, garnished with fresh cilantro if desired.

- Choose a sugar pumpkin or pie pumpkin for the best flavor.
- Consider adding lime juice or red pepper flakes for extra flavor.
