Description
Pumpkin Chai Bread Pudding is a delightful dessert that combines the warm flavors of pumpkin and chai spices, made by soaking stale bread in a creamy custard mixture.
Ingredients
- Stale bread: 6 cups, cubed (preferably brioche or challah)
- Pumpkin puree: 1 cup (canned or homemade)
- Chai spices: 1 teaspoon (a blend of cinnamon, ginger, cardamom, and cloves)
- Eggs: 4 large
- Milk: 2 cups (whole or 2%)
- Brown sugar: 3/4 cup, packed
- Vanilla extract: 1 teaspoon
- Salt: 1/4 teaspoon
- Butter: for greasing the baking dish
Instructions
- Prepare the stale bread by cutting it into one-inch cubes.
- Make the custard mixture by whisking together eggs, milk, brown sugar, chai spices, vanilla extract, and salt in a large bowl.
- Combine the cubed bread and pumpkin puree in a separate bowl, then pour the custard mixture over the bread and fold gently.
- Let the mixture sit for 15-20 minutes to absorb the flavors, then pour it into a greased 9×13 inch baking dish.
- Bake at 350°F (175°C) for 40-45 minutes until golden brown and set.
- Let cool for 10 minutes before serving, optionally topped with caramel sauce, whipped cream, or ice cream.
Notes
- Stale bread is key for absorption; if using fresh bread, toast it at 300°F (150°C) for 10-15 minutes.
- Adjust spice levels according to taste; add nutmeg or allspice for variation.
- Can be made ahead of time and refrigerated before baking.
