Description

Prosecco Orange Cupcakes with Aperol Cream combine sparkling Prosecco, zesty orange, and bittersweet Aperol in a light, layered dessert perfect for festive occasions.

  • 1 box (15.25 ounces) vanilla cake mix, plus ingredients as per package
  • 1/2 cup Prosecco
  • Zest of 1 orange
  • 1 box (3.4 ounces) instant vanilla pudding, plus ingredients as per package
  • 3 tablespoons Aperol
  • 1 1/2 cups heavy cream
  • 1 tablespoon confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup apricot preserves
  • 2 tablespoons Aperol (for jam)
  • 6 oranges (for garnish and layering)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin with cooking spray.
  2. Prepare cake mix according to package instructions, replacing 1/2 cup water with Prosecco and adding orange zest. Mix gently.
  3. Fill muffin cups two-thirds full and bake for 20-23 minutes until a toothpick comes out clean.
  4. Cool cupcakes for 10 minutes in pan, then transfer to a board and slice each horizontally in half.
  5. Prepare instant vanilla pudding per package instructions. Once set, whisk in 3 tablespoons Aperol. Refrigerate.
  6. Whip heavy cream with confectioners’ sugar and vanilla extract until soft peaks form. Refrigerate.
  7. Mix apricot preserves with 2 tablespoons Aperol to make Aperol jam.
  8. Peel and slice oranges into thin half-moon shapes for layering and garnish.
  9. Assemble in glasses: spoon pudding, arrange orange slices against glass, add cupcake half, spoon whipped cream, add Aperol jam, repeat layering ending with orange slice garnish.
  10. Refrigerate assembled trifles until ready to serve.
