- 1 box (15.25 ounces) vanilla cake mix, plus ingredients as per package
- 1/2 cup Prosecco
- Zest of 1 orange
- 1 box (3.4 ounces) instant vanilla pudding, plus ingredients as per package
- 3 tablespoons Aperol
- 1 1/2 cups heavy cream
- 1 tablespoon confectioners’ sugar
- 1 teaspoon pure vanilla extract
- 1 cup apricot preserves
- 2 tablespoons Aperol (for jam)
- 6 oranges (for garnish and layering)
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin with cooking spray.
- Prepare cake mix according to package instructions, replacing 1/2 cup water with Prosecco and adding orange zest. Mix gently.
- Fill muffin cups two-thirds full and bake for 20-23 minutes until a toothpick comes out clean.
- Cool cupcakes for 10 minutes in pan, then transfer to a board and slice each horizontally in half.
- Prepare instant vanilla pudding per package instructions. Once set, whisk in 3 tablespoons Aperol. Refrigerate.
- Whip heavy cream with confectioners’ sugar and vanilla extract until soft peaks form. Refrigerate.
- Mix apricot preserves with 2 tablespoons Aperol to make Aperol jam.
- Peel and slice oranges into thin half-moon shapes for layering and garnish.
- Assemble in glasses: spoon pudding, arrange orange slices against glass, add cupcake half, spoon whipped cream, add Aperol jam, repeat layering ending with orange slice garnish.
- Refrigerate assembled trifles until ready to serve.
