For the Chocolate Cake:
- 1/4 cup cocoa powder
- 1/4 cup boiling water
- 1 1/8 cup all-purpose flour
- 3/4 tsp baking soda
- 1/8 tsp salt
- 6 tbsp unsalted butter, at room temperature
- 7/8 cup sugar
- 1/2 tsp vanilla extract
- 1 large egg
- 2/3 cup sour cream
For the Orange Cream Cheese Frosting:
- 3 oz cream cheese, at room temperature
- 2 tbsp unsalted butter, at room temperature
- Zest of 1/4 orange
- 1/2 cup confectioner’s sugar
For the Rich Chocolate Frosting:
- 7 1/2 oz semisweet chocolate
- 1/2 cup heavy whipping cream
- 3 tbsp unsalted butter, at room temperature
- (Optional) 50g sliced almonds for decoration
Instructions
For the Orange Almond Cake:
- Prep the pan: Preheat your oven to 350°F (175°C) and grease and flour a 9-inch cake pan.
- Mix wet ingredients: In a bowl, whisk together the eggs, sour cream, almond extract, vanilla extract, orange extract, and orange zest.
- Mix dry ingredients: In a stand mixer, combine the flour, ground almonds, sugar, baking powder, baking soda, and salt. Mix at low speed.
- Combine wet and dry: Add the butter and the remaining sour cream to the dry ingredients and mix on low speed until evenly incorporated. Increase to medium speed and beat for 1-2 minutes. Add the wet mixture in parts, scraping the sides of the bowl to ensure even mixing.
- Bake: Pour the batter into the prepared pan and bake for 35-45 minutes or until a toothpick comes out clean. Cool on a wire rack before removing from the pan.
For the Chocolate Cake:
- Prep the pan: Grease and flour another 9-inch cake pan.
- Mix cocoa slurry: In a bowl, combine cocoa powder with boiling water until smooth.
- Mix dry ingredients: In another bowl, whisk together flour, baking soda, and salt.
- Cream butter and sugar: Beat the butter and sugar in a stand mixer until light and fluffy. Add the egg and vanilla extract, mixing until incorporated.
- Combine wet and dry: Gradually add the dry ingredients, alternating with sour cream, until smooth. Then, add the cocoa slurry and mix until fully combined.
- Bake: Pour the batter into the prepared pan and bake for 35-40 minutes. Cool completely on a wire rack.
For the Orange Cream Cheese Frosting:
- Beat cream cheese and butter: Beat the room-temperature cream cheese and butter until smooth and creamy.
- Add sugar and zest: Gradually mix in the confectioner’s sugar and orange zest. Continue to beat until smooth.
For the Rich Chocolate Frosting:
- Heat cream: In a saucepan, heat the cream over medium heat until it starts to bubble at the edges.
- Melt chocolate: Chop the semisweet chocolate and add it to the cream. Let it sit for a minute, then whisk until smooth.
