Description

Potato Chip Chocolate Chip Cookies combine sweet and salty flavors in a soft, chewy cookie packed with chocolate chips and crunchy potato chips.


Ingredients

  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ⅔ cup light brown sugar
  • ½ cup unsalted butter, softened
  • ⅓ cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 cup semisweet chocolate chips
  • 2 ¾ cups crushed kettle-style potato chips, divided

Instructions

  1. In a medium bowl, whisk together flour, baking soda, and salt.
  2. In a stand mixer, beat butter, brown sugar, and granulated sugar on medium-high speed until pale and fluffy (2–3 minutes).
  3. Add the egg and vanilla extract, and beat until well combined.
  4. Reduce speed to low and gradually add dry ingredients. Mix until just combined.
  5. Fold in chocolate chips and 2 cups of crushed potato chips using a spatula.
  6. Cover the dough and refrigerate for about 1 hour.
  7. Preheat oven to 350°F (175°C) and position racks in upper and lower thirds. Line two baking sheets with parchment paper.
  8. Roll about 3 tablespoons of dough into balls. Roll each in the remaining ¾ cup of crushed potato chips, pressing gently to adhere.
  9. Place on baking sheets 1 inch apart and flatten into 2 ½ inch pucks.
  10. Bake for 11–14 minutes, rotating sheets halfway through, until puffed and golden around the edges.
  11. Let cookies cool on baking sheets for 2 minutes, then transfer to wire racks to cool completely.
