Description
Potato Chip Chocolate Chip Cookies combine sweet and salty flavors in a soft, chewy cookie packed with chocolate chips and crunchy potato chips.

- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- ⅔ cup light brown sugar
- ½ cup unsalted butter, softened
- ⅓ cup granulated sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 1 cup semisweet chocolate chips
- 2 ¾ cups crushed kettle-style potato chips, divided
Instructions
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a stand mixer, beat butter, brown sugar, and granulated sugar on medium-high speed until pale and fluffy (2–3 minutes).
- Add the egg and vanilla extract, and beat until well combined.
- Reduce speed to low and gradually add dry ingredients. Mix until just combined.
- Fold in chocolate chips and 2 cups of crushed potato chips using a spatula.
- Cover the dough and refrigerate for about 1 hour.
- Preheat oven to 350°F (175°C) and position racks in upper and lower thirds. Line two baking sheets with parchment paper.
- Roll about 3 tablespoons of dough into balls. Roll each in the remaining ¾ cup of crushed potato chips, pressing gently to adhere.
- Place on baking sheets 1 inch apart and flatten into 2 ½ inch pucks.
- Bake for 11–14 minutes, rotating sheets halfway through, until puffed and golden around the edges.
- Let cookies cool on baking sheets for 2 minutes, then transfer to wire racks to cool completely.

- Do not overmix the dough after adding dry ingredients to avoid tough cookies.
- Chill the dough for better texture and flavor.
- Use high-quality chocolate chips for better flavor.
- Store in an airtight container with a slice of bread to retain softness.
