- 1 cup granulated sugar (for caramel)
- ½ cup heavy cream
- ¼ cup unsalted butter (for caramel)
- 1 teaspoon vanilla extract
- Sea salt (for garnish)
Instructions
- Prepare the tart shells by mixing flour and sugar, then adding butter until crumbly. Stir in egg yolk and cold water, then chill.
- Make the caramel filling by boiling sugar and water until amber, then whisk in cream and butter.
- Prepare the apple filling by coring and slicing the apples thinly.
- Assemble the tarts by arranging apple slices in the tart shells and drizzling with caramel.
- Bake the tarts at 375°F (190°C) for 20-25 minutes until apples are tender and crust is golden.
Notes
- Chill the dough for at least 30 minutes for a flaky crust.
- Use crisp apple varieties for the best texture.
- Be careful not to stir the caramel while boiling to prevent crystallization.
- Store leftovers in an airtight container at room temperature for up to two days.
