Instructions
- Preheat the oven to 325°F (160°C). Combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then cool.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing after each. Mix in vanilla, pistachio paste, and sour cream until smooth.
- Pour the filling into the cooled crust. Smooth the top. Bake at 325°F (160°C) for 50-60 minutes, until edges are set but center is slightly jiggly.
- Cool the cheesecake in the oven with the door slightly ajar for 1 hour, then chill for at least 4 hours or overnight.
- Before serving, top with chopped pistachios and whipped cream (optional).
