Description

Pink Lemonade Cupcakes are a bright and fruity dessert featuring strawberry and lemon flavors, topped with pink lemonade frosting. Perfect for summer parties, birthdays, or picnics, these cupcakes are as beautiful as they are delicious.

  • 1 box white cake mix (plus ingredients called for on the box)
  • 20 strawberries, trimmed
  • 1 cup (2 sticks) butter, softened
  • 3 1/2 cups powdered sugar, divided
  • 1/4 cup lemonade or freshly squeezed lemon juice
  • 4 drops red food coloring
  • Lemon slices for garnish
  • Strawberry slices for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Line 2 muffin tins with 20 cupcake liners.
  2. Prepare cake batter according to package instructions.
  3. Pour batter into liners, filling each about 2/3 full. Place a trimmed strawberry in the center of each cupcake.
  4. Bake for 20 minutes or until a toothpick inserted comes out clean. Let cool completely.
  5. To make frosting, beat together softened butter and half the powdered sugar until smooth. Add lemonade and remaining sugar, then beat until fluffy. Mix in red food coloring until desired pink color is achieved.
  6. Pipe frosting onto cooled cupcakes using a star tip.
  7. Garnish each cupcake with a lemon slice and a strawberry slice. Optionally, add a decorative straw.
