Instructions
- Preheat your oven to 340°F (170°C). Butter and flour three 6-inch round cake pans.
- Sift together the flour, baking soda, baking powder, and salt in a large bowl.
- In another bowl, cream the butter and sugar until light and fluffy. Add egg whites, yogurt, milk, and vanilla extract and mix well.
- Gradually add the dry ingredients to the wet mixture, stirring gently. Avoid over-mixing. Fold in the sprinkles.
- Divide the batter evenly among the prepared pans and bake for 25-30 minutes. Test for doneness with a toothpick.
- While the cakes bake, prepare the vanilla buttercream by beating butter until fluffy. Gradually add powdered sugar, then heavy cream, and mix until spreadable. Divide the buttercream and color one batch with pink food gel.
- Once cakes are baked and cooled, assemble the cake by layering each cake with buttercream and sprinkles in between layers. Apply a crumb coat, chill briefly, and then cover the whole cake with remaining buttercream.
- Decorate the cake with piping, and top with extra sprinkles.
