Ingredients

- 1 1/2 ounces rum (any variety)

- 1 ounce coconut water
- Seltzer water, for topping off
- 1 lime wedge, for juice and garnish
Instructions
- Muddle the pineapple chunks with brown sugar in a cocktail shaker until pureed.
- Add the rum and fill the shaker with ice.
- Shake vigorously until the shaker feels frosty (about 20 seconds).
- Strain the mixture into a highball or pint glass filled halfway with ice.
- Add coconut water and top off with seltzer water.
- Squeeze the juice from the lime wedge into the glass and drop the wedge in.
- Garnish with a pineapple wedge and pineapple leaves. Serve immediately.
