Description

Refreshing Italian-style Pineapple Granita with citrus and rum, topped with whipped cream and toasted coconut. A perfect tropical frozen dessert.


Ingredients

  • 2 cups pineapple, peeled and cubed
  • 1/2 cup freshly squeezed mandarin orange juice
  • 1/4 cup packed dark brown sugar
  • 1 oz gold rum
  • 2 tsp lime juice
  • Pinch of kosher salt
  • Whipped cream (for serving)
  • Toasted coconut flakes (for serving)
  • Fresh pineapple, diced small (for serving)

Instructions

  1. Place pineapple, mandarin orange juice, dark brown sugar, gold rum, lime juice, and kosher salt in a blender; blend until smooth and sugar is dissolved.
  2. Let the mixture rest for 1 minute, then blend again briefly to mix evenly.
  3. Strain mixture into a shallow baking dish to remove pulp.
  4. Freeze uncovered for about 2 hours until edges start to freeze.
  5. Scrape icy crystals with a fork to break clumps; stir well and return to freezer.
  6. Freeze another 2 hours or until almost solid; scrape again with a fork.
  7. Freeze at least 1 more hour until fully frozen and fluffy.
  8. Serve scooped into dishes topped with whipped cream, toasted coconut, and diced pineapple.
