Ingredients

  • Arborio rice: 1 cup (about 200 grams)
  • Shrimp: 1 pound (about 450 grams), peeled and deveined
  • Fresh basil pesto: 1/2 cup (about 120 grams)
  • Parmesan cheese: 1/2 cup, grated (about 50 grams)
  • Garlic: 2 cloves, minced
  • Chicken broth: 4 cups (about 1 liter), warmed
  • Olive oil: 2 tablespoons
  • Lemon juice: 1 tablespoon
  • Salt and pepper: to taste
  • Fresh basil leaves: for garnish (optional)

Instructions

  1. Prepare the shrimp by peeling and deveining them. Heat 1 tablespoon of olive oil in a large skillet over medium heat, add the shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until pink and opaque. Remove and set aside.
  2. In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 30 seconds until fragrant. Add Arborio rice and toast for 1-2 minutes until slightly translucent.
  3. Add one ladleful of warmed chicken broth to the rice, stirring frequently until absorbed. Continue adding broth, one ladle at a time, for about 18-20 minutes until creamy and the rice is al dente.
  4. Remove from heat and stir in fresh basil pesto, grated Parmesan cheese, and lemon juice. Adjust seasoning with salt and pepper. Serve topped with cooked shrimp and garnish with fresh basil leaves if desired.
