Description

A delightful Persian dessert that combines the zestiness of fresh oranges with the nutty crunch of pistachios, topped with a sweet cardamom syrup.


Ingredients

  • All-purpose flour: 1 ¾ cups (220g)
  • Baking powder: 1 ½ tsp
  • Baking soda: ½ tsp
  • Ground cardamom: ½ tsp
  • Salt: ¼ tsp
  • Orange zest: Zest of 2 large oranges
  • Granulated sugar: ¾ cup (150g)
  • Unsalted butter: ½ cup (115g), softened
  • Large eggs: 3 eggs
  • Plain yogurt: ½ cup (120ml)
  • Fresh orange juice: ¼ cup (60ml)
  • Shelled pistachios: ½ cup (60g), chopped
  • Granulated sugar: ½ cup (100g)
  • Water: ½ cup (120ml)
  • Ground cardamom: 1 tsp
  • Fresh orange juice: 2 tbsp

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cardamom, and salt.
  3. In a large mixing bowl, cream the softened unsalted butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the yogurt, fresh orange juice, and orange zest until well combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  7. Fold in the chopped pistachios.
  8. Pour the batter into a prepared 9×5-inch loaf pan and smooth the top.
  9. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack.
  11. While the loaf cools, prepare the cardamom syrup by combining granulated sugar, water, ground cardamom, and fresh orange juice in a saucepan and bringing it to a boil.
  12. Reduce heat and let it simmer for about 5 minutes until slightly thickened.
  13. Poke holes in the top of the loaf and drizzle the cooled syrup over it, allowing it to absorb before slicing.

Notes

  • Be careful not to overmix the batter to avoid a dense loaf.
  • Store the loaf wrapped tightly to retain moisture.
