Description
A delightful Persian dessert that combines the zestiness of fresh oranges with the nutty crunch of pistachios, topped with a sweet cardamom syrup.
Ingredients
- All-purpose flour: 1 ¾ cups (220g)
- Baking powder: 1 ½ tsp
- Baking soda: ½ tsp
- Ground cardamom: ½ tsp
- Salt: ¼ tsp
- Orange zest: Zest of 2 large oranges
- Granulated sugar: ¾ cup (150g)
- Unsalted butter: ½ cup (115g), softened
- Large eggs: 3 eggs
- Plain yogurt: ½ cup (120ml)
- Fresh orange juice: ¼ cup (60ml)
- Shelled pistachios: ½ cup (60g), chopped
- Granulated sugar: ½ cup (100g)
- Water: ½ cup (120ml)
- Ground cardamom: 1 tsp
- Fresh orange juice: 2 tbsp
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cardamom, and salt.
- In a large mixing bowl, cream the softened unsalted butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the yogurt, fresh orange juice, and orange zest until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
- Fold in the chopped pistachios.
- Pour the batter into a prepared 9×5-inch loaf pan and smooth the top.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack.
- While the loaf cools, prepare the cardamom syrup by combining granulated sugar, water, ground cardamom, and fresh orange juice in a saucepan and bringing it to a boil.
- Reduce heat and let it simmer for about 5 minutes until slightly thickened.
- Poke holes in the top of the loaf and drizzle the cooled syrup over it, allowing it to absorb before slicing.
Notes
- Be careful not to overmix the batter to avoid a dense loaf.
- Store the loaf wrapped tightly to retain moisture.
