- 1 tablespoon fresh lemon juice
- 1–2 teaspoons peeled, minced fresh ginger (optional)
- 1 teaspoon ground cinnamon
- 2 tablespoons cold unsalted butter (cut into small cubes)
- 1 large egg (beaten with 1 tablespoon milk for egg wash)
- Coarse sugar (optional, for sprinkling on crust)
Instructions
- Prepare your pie crust by rolling out the dough and fitting it into a 9-inch pie dish. Trim and crimp the edges, saving the second half of the dough for the lattice top.
- Peel and chop the peaches into 1-inch chunks, then place them in a large mixing bowl.
- Mix in the sugar, flour (or tapioca), lemon juice, ginger (if using), and cinnamon until the peaches are well coated.
- Preheat your oven to 425°F (220°C).
- Pour the peach filling into the pie crust and dot with cold butter cubes. Roll out the remaining dough and create a lattice top. Seal the edges.
- Brush the top crust with the egg wash and sprinkle with coarse sugar if desired.
- Bake at 425°F for 20 minutes, then reduce the temperature to 375°F (190°C) and bake for another 45–50 minutes until the filling is bubbling and the crust is golden brown.
- Remove from oven and let the pie cool for at least 4 hours before serving to allow the filling to set.
