A delicious pecan upside down bundt cake with caramelized pecans.
Ingredients

- 1 cup unsalted butter
- 1 cup packed brown sugar
- 1 cup pecans, chopped
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 3 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, melt butter and brown sugar over medium heat until combined.
- Pour the mixture into a bundt pan and sprinkle chopped pecans on top.
- In a bowl, mix flour, granulated sugar, baking powder, baking soda, and salt.
- In another bowl, whisk buttermilk, eggs, and vanilla.
- Add wet ingredients to dry ingredients and mix until just combined.
- Pour batter over the pecans in the bundt pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes, then invert onto a serving plate.
Notes
- Store leftovers in an airtight container.
- Best served warm or at room temperature.
- Can be topped with whipped cream or ice cream.
