- 2 large eggs
- ½ cup unsalted butter, melted
- ½ cup milk
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- ½ cup corn syrup
Instructions
- Preheat the oven to 350°F (175°C) and prepare your muffin pan with non-stick cooking spray or muffin liners.
- In a large mixing bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, whisk together eggs, melted butter, milk, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients and stir gently until just combined. Fold in chopped pecans.
- Fill each muffin cup about two-thirds full with batter. Optionally, sprinkle additional pecans on top.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
