Description

Delicious muffins filled with juicy pears and crunchy walnuts, topped with a sweet, crumbly streusel.


Ingredients

  • All-purpose flour: 2 cups (250 grams)
  • Ripe pears: 2 medium, peeled, cored, and diced
  • Walnuts: 1 cup (120 grams), chopped
  • Brown sugar: 3/4 cup (150 grams)
  • Ground cinnamon: 1 teaspoon
  • Baking powder: 2 teaspoons
  • Eggs: 2 large
  • Milk: 1/2 cup (120 milliliters)
  • Vanilla extract: 1 teaspoon
  • Butter: 1/2 cup (115 grams), melted
  • Salt: 1/2 teaspoon

For the streusel topping:

  • All-purpose flour: 1/2 cup (65 grams)
  • Brown sugar: 1/4 cup (50 grams)
  • Ground cinnamon: 1/2 teaspoon
  • Butter: 2 tablespoons (30 grams), cold and cubed
  • Walnuts: 1/4 cup (30 grams), chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
  2. In a large bowl, whisk together the dry ingredients: flour, brown sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix the wet ingredients: eggs, milk, vanilla extract, and melted butter.
  4. Combine the wet and dry ingredients, stirring gently until just combined.
  5. Prepare the streusel topping by mixing flour, brown sugar, cinnamon, and cold butter until crumbly.
  6. Fold in the diced pears and chopped walnuts into the muffin batter.
  7. Fill the muffin cups about 2/3 full with batter and sprinkle the streusel topping on each muffin.
  8. Bake for 18-22 minutes or until a toothpick comes out clean.
  9. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

  • Choose ripe but firm pears for the best texture.
