Ingredients
- All-purpose flour: 2 cups (250 grams)
- Ripe pears: 2 medium, peeled, cored, and diced
- Walnuts: 1 cup (120 grams), chopped
- Brown sugar: 3/4 cup (150 grams)
- Ground cinnamon: 1 teaspoon
- Baking powder: 2 teaspoons
- Eggs: 2 large
- Milk: 1/2 cup (120 milliliters)
- Vanilla extract: 1 teaspoon
- Butter: 1/2 cup (115 grams), melted
- Salt: 1/2 teaspoon
For the streusel topping:
- All-purpose flour: 1/2 cup (65 grams)
- Brown sugar: 1/4 cup (50 grams)
- Ground cinnamon: 1/2 teaspoon
- Butter: 2 tablespoons (30 grams), cold and cubed
- Walnuts: 1/4 cup (30 grams), chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
- In a large bowl, whisk together the dry ingredients: flour, brown sugar, baking powder, cinnamon, and salt.
- In another bowl, mix the wet ingredients: eggs, milk, vanilla extract, and melted butter.
- Combine the wet and dry ingredients, stirring gently until just combined.
- Prepare the streusel topping by mixing flour, brown sugar, cinnamon, and cold butter until crumbly.
- Fold in the diced pears and chopped walnuts into the muffin batter.
- Fill the muffin cups about 2/3 full with batter and sprinkle the streusel topping on each muffin.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Choose ripe but firm pears for the best texture.
- Store leftover muffins in an airtight container at room temperature for up to three days.
- Freeze muffins for up to a month for longer storage.
