Ingredients
- All-purpose flour: 2 cups (240 grams)
- Ripe pears: 2 medium, peeled and diced
- Brown sugar: 1 cup (200 grams), packed
- Ground cinnamon: 2 teaspoons
- Butter: 1/2 cup (115 grams), softened
- Eggs: 2 large
- Baking powder: 2 teaspoons
- Vanilla extract: 1 teaspoon
- Powdered sugar: 1 cup (120 grams), for glaze
- Milk: 2 tablespoons (for glaze)
Instructions
- Prepare the pears by washing, peeling, and dicing them into small pieces.
- Cream together the softened butter and brown sugar in a large mixing bowl until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Prepare the cinnamon filling by mixing ground cinnamon and brown sugar in a small bowl.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and a pinch of salt. Gradually add this to the wet batter, alternating with the diced pears.
- Pour half of the batter into a prepared cake pan, sprinkle the cinnamon filling over it, then pour the remaining batter on top.
- Preheat the oven to 350°F (175°C) and bake for 30-35 minutes until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Drizzle with glaze before serving.
