  • Active dry yeast: 2 teaspoons
  • Milk: 1 cup (240ml), warm (about 110°F or 43°C)
  • Unsalted butter: 1/4 cup (60g), melted
  • Eggs: 2 large
  • Salt: 1 teaspoon

Instructions

  1. Activate the yeast by mixing warm milk with 1 tablespoon of sugar and sprinkling the yeast on top. Let it sit for 5-10 minutes until frothy.
  2. Prepare the pear filling by cooking diced pears with 1 tablespoon of sugar in a skillet over medium heat for 5-7 minutes until soft and caramelized.
  3. In a large mixing bowl, combine flour, cardamom, and salt. Make a well in the center and add melted butter, eggs, and the yeast mixture. Mix until a dough forms.
  4. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 to 1.5 hours until doubled in size.
  5. After the first rise, punch down the dough, roll it out into a rectangle, spread the pear filling, roll it into a log, and twist it. Place in a greased loaf pan and let rise for another 30-45 minutes.
  6. Preheat the oven to 350°F (175°C) and bake the bread for 30-35 minutes until golden brown.
