This Pear and Almond Cake is a moist, flavorful dessert with ground almonds, perfect for any occasion. A delightful treat that’s both simple and delicious.

Ingredients

Scale
  • 3 ripe pears, peeled, cored, and sliced (about 2 cups)
  • 200g all-purpose flour (about 1 1/2 cups)
  • 100g almond flour (about 1 cup)
  • 100g ground almonds (about 1 cup)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3 large eggs
  • 200g granulated sugar (1 cup)
  • 120g unsalted butter, softened (1/2 cup)
  • 1 teaspoon vanilla extract
  • 50g milk (about 1/4 cup)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. In a medium bowl, combine the all-purpose flour, almond flour, ground almonds, baking powder, salt, and cinnamon. Set aside.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until smooth and well combined.
  6. Gently fold in the pear slices, ensuring they are evenly distributed in the batter.
  7. Pour the batter into the prepared cake pan and spread it evenly.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  10. Once cooled, dust the top with powdered sugar if desired before serving.
